200 ml of Coconut Cream
120 ml of bundaberg dark rum (or Dark rum)
dry ginger ale (or Ginger ale)
1/2 of freshly crushed pineapple (or Pineapple Juice)
Crush the pineapple in a blender with ice and add coconut cream and rum and pulse blend for 3 clicks\r
Serve in tall cocktail glass - poco grande is excellent - presents a taste sensation about to happen\r
Fill glass 3/4 full and top with ginger ale\r
Garnish with mint leaves\r
Can rim glass with sugar if desired
