6 oz of drained and chopped maraschino cherries (or brandied cherries)
15 oz of cream of coconut
8 oz of well drained pineapple (or Pineapple)
1/2 of flaked cupsweetened coconuts (or pinchshredded coconuts)
12 of frozen ozthawed whipped cream (or Cream Sherry)
Line 12 muffin cups with paper baking cups.\r
In a large bowl, combine the whipped topping and cream of coconut until well blended. Add the crushed pineapple, cherries, and coconut.\r
Spoon into the baking cups, cover, and freeze for at least 3 hours before serving.\r
Garnishing Tip:\r
These treats have a tropical taste, so why not make 'em look tropical, too? Before freezing, sprinkle each one with toasted flaked coconut and top with a whole cherry. Then, before serving, top each with a paper umbrella.
