3 cup of Watermelon
4 oz of Lemon Juice
5 oz of white rum (or Light Rum)
4 oz of simple syrup
spearmint leaves (or mint)
Cube the watermelon. Roughly chop 12 spearmint leaves. Blend all ingredients on high until fully smooth. Divide the mixture among popsicle molds. If inserting wooden sticks into the popsicles, let the mixture freeze for about 45 minutes to an hour beforehand. Freeze for another hour or until fully frozen.
