2 oz of Bourbon
3 dash of Angostura bitters

fresh thyme (or thyme)
Prepare thyme simple syrup: Add 1 cup water and thyme to a small saucepan, and bring to a boil. Reduce heat, and allow to simmer for 15 minutes. Add sugar, and stir until it dissolves. Remove from heat. Allow to cool for 20 minutes, then strain. Discard thyme. Refrigerate syrup immediately.
You will need 1.5 ounces of thyme simple syrup for this recipe. Take half a grapefruit and half an orange and section, then cut into bite-sized chunks. In a mason jar or highball glass, stir together the fruit, bourbon, bitters, and thyme simple syrup over ice. Top with sparkling water and garnish with a orange twist and sprig of thyme.
