1 1/2 oz of Mezcal (or Tequila)
1 oz of St Germain (or Elderflower Cordial)
1/2 oz of Lemon Juice
1/2 oz of egg white (or egg)
1 pinch of black pepper
Combine all liquids into a cocktail shaker. Vigorously dry shake for 5 seconds. Add ice. Shake, double strain into a coupe, garnish with a pinch of fresh ground black pepper on top.
